DSC4771Kale is one of the vegetables I see everywhere. In the south kale is mostly cooked with mustard greens and Swiss chard, slow the traditional Southern way, with Onions, Bacon (or smoked Ham Hocks) and Garlic, simmered for 2 to 3 hours until tender.
I love kale and you always find kale in my fridge as well as Tahini so creating a quick snack was a no brainer. Adding kale to hummus adds a serious nutritional punch. Kale has only about 40 calories a cup, more vitamins then an orange and 1 cup of kale has almost three times more calcium than a school lunch milk carton.


DSC4765We all know eating fruits and vegetables is one of the tried and true recommendations for a healthy diet
It is recommended to eat about 8 to 10 servings of vegetables and fruit daily. That equals about 3 cups a day for an adult, easier said than done and finding new ways to add vegetables to your daily eating routine is always a challenge.

DSC4684 2I find that by snacking during the day, I’m are more likely satisfied with reasonable lunch and dinner portions. So snacking between meals, helps to control my appetite and what is better than snacking on healthy kale hummus 

This hummus is so easy, yummy and healthy. On an average one cup of Humus has about 400 calories adding yogurt and using less Tahini reduces the fat and makes a light creamy hummus that is so much better that than store bought stuff. Chickpeas are high in fiber and protein and fiber reduces appetite, making you feel fuller for longer and thereby lowering your overall calorie intake.
