Kale is one of the vegetables I see everywhere. In the south kale is mostly cooked with mustard greens and Swiss chard, slow the traditional Southern way, with Onions, Bacon (or smoked Ham Hocks) and Garlic, simmered for 2 to 3 hours until tender.
