No cream – cream sauce

When working with the EatingWell team on menu development, I found their cream sauce is the perfect answer for a calorie reduced cream sauce.  A great recipe that absolutely works perfect. With only 79 calories per 4 ounce serving, the sauce is a winner, not only in regards to nutritions, but, as well, in quality.

I prepare my version of the sauce without white wine and use my recipe of a scratch Chicken stock or you could use a scratch Vegetable stockeither stock would work fine.

The recipe makes a good size batch.  Whatever is not needed, cover and refrigerate for up to 1 week. Or place in the freezer for up to 3 months and defrost overnight in the refrigerator, when needed.
