The magic with this roasted banana chocolate bread is the bananas. I roast them in the oven at 350 F for 40 minutes. By adding roasted bananas that have been slowly caramelized adds the sweetness you want, without adding granulated sugar. You should use over ripe bananas; however to be honest I’m never able to keep enough bananas in my kitchen for them to become over ripe. I love yogurt based breads. They are so moist!! This recipe is everything you’ll ever want in a banana bread, full of flavor with natural sweetness; great for breakfast, a snack, or a lite lunch.
You want to use ripe bananas for roasting, unripe bananas will be hard and starchy and will not release their natural sugars and flavors. By roasting the bananas, the inner moisture of the banana evaporates and the natural sugars caramelize and intensify the flavor. Try it, the roasting creates a pretty amazing flavor and sweetness.
