Roasted banana chocolate bread

Roasted Banana, Chocolate Bread with Quark & Fresh Fruit

The magic with this roasted banana chocolate bread is the bananas. I roast them in the oven at 350 F for 40 minutes. By adding roasted bananas that have been slowly caramelized adds the sweetness you want, without adding granulated sugar. You should use over ripe bananas; however to be honest I’m never able to keep enough bananas in my kitchen for them to become over ripe. I love yogurt based breads. They are so moist!! This recipe is everything you’ll ever want in a banana bread, full of flavor with natural sweetness; great for breakfast, a snack, or a lite lunch.

Roasted Banana Pudding

You want to use ripe bananas for roasting, unripe bananas will be hard and starchy and will not release their natural sugars and flavors. By roasting the bananas, the inner moisture of the banana evaporates and the natural sugars caramelize and intensify the flavor. Try it, the roasting creates a pretty amazing flavor and sweetness.

Roasted Banana, Chocolate Bread with Quark and Fresh Fruit :

The taste: Great flavor, moist, slightly dense bread with natural sweetness from the roasted bananas.
The bittersweet chocolate kicks it up a notch.

The process
: Easy to make, quick recipe that bakes nicely.  If you don’t want to make fresh quark, substitute with a good quality drained Greek yogurt.

The verdict: Healthier whole wheat banana bread, with no sugar or butter added. The recipe uses a small amount of canola oil — which is much better for your heart — honey and roasted bananas, which of course, means lots of flavor. A little coconut flour adds protein and fiber and creates a more tender texture.

I wasn’t sure if I should call it a roasted banana chocolate bread or baked banana chocolate bread.
Both methods are very much the same and are interchangeable, both are dry heat cooking and both are operating between 300 and 400 F.
I decided to call it roasted banana chocolate bread, I know you agree, it sounds so much better. My roasted banana chocolate bread recipe is a full of flavor and serving it with quark and fresh fruit makes it even better. Take advanatge of the summer fruits, eat more fresh fruit as part of your overall diet; they are a natural source of vitamins and minerals.

Quark in the USA is hard to find in stores, so I make my own fresh quark, it’s extremely easy to make.
Once you taste freshly made quark, I guarantee you will continue to make your own. Technically, quark is a simple cheese and it dominates Greek yogurt in just about every nutritional aspect.
As a bonus, my quark recipe is free of added sugar, fillers, starches and artificial ingredients.
It tastes like a cross between Greek yogurt, cream cheese and cottage cheese, think of it as a creamier, thicker version of yogurt. If you don’t want to make your own fresh quark use a cheese cloth and drain a good quality Greek yogurt and you will be just fine.
