Wash peaches, remove the pit and chop peaches into 1/2" pieces. Add the sugar and lavender, and stir to coat. Cover tightly and set aside in a dark, cool spot until the mixture is syrupy and the fruit is broken down for approximately 2 to 3 days.
After 2 or 3 days, add the apple cider to the marinated peaches and mix well. Strain the peaches at least once through a cheesecloth or repeat as desired until the syrup shows no cloudiness. Pour into a sterilized glass bottle and store in the refrigerator.
2 1/2 cups apple cider vinegar
Mix with club soda or water and enjoy
Mix one part peach-lavender syrup with ten parts of water or club soda and add more syrup, if desired. Enjoy!
