In Chinese cuisine, rice congee is the food that adds the "QI" to your day, the belief is that the longer you cook the porridge the more "QI" or vital energy you generate.

Ingredients
 
 

  • 1 cup rice red
  • 1/2 cup barley pearl
  • 1/4 cup cranberries dried
  • 7 cups water
  • 3 cups Pomegranate juice
  • 1/2 tsp Cinnamon ground
  • 1/2 tsp Ginger ground
  • 1/4 tsp Allspice ground
  • 1/8 tsp Cloves ground
  • 1 tbsp butter
  • 1 tbsp butter
  • 1/4 cup almonds slivered
  • 1/4 cup pepitas shelled pumpkin seeds
  • 1/4 cup coconut flaked
  • 5 tsp molasses pommegranate

Instructions
 

Cook rice and barley

  • Bring rice, barley, cranberries, water, and pomegranate juice to a boil in a 4-quart saucepan. Reduce heat to medium-low; cover and simmer 1 1/2 hours to 1 hour and 45 minutes, or until a desired creamy consistency is reached, stirring occasionally.

Mix spices

  • Meanwhile, mix all of the spices in a small bowl. Divide the spice mixture in half. Set aside.
    1/2 tsp Cinnamon, 1/2 tsp Ginger, 1/4 tsp Allspice, 1/8 tsp Cloves

Cook almonds, pepitas, and coconut

  • Melt 1 tablespoon of the butter in a small skillet on medium heat. Add almonds, pepitas, coconut, and half of the spice mixture; cook and stir until fragrant and golden brown, about 3 to 5 minutes. Set aside.

  • Stir the remaining spice mixture and 1 tablespoon butter into the cooked rice congee.

Serve

  • spoon congee into serving bowls. Top each with the toasted coconut-nut mixture, mango, and yogurt. Drizzle with pomegranate molasses.
