Cook the Yellow Split Peas

  • Add duck fat to Dutch Oven over medium heat.
    Stir in celery, onions, carrots, and leeks (white and green parts only) and cook all vegetables for about 4 minutes or until translucent.
    1 tbsp Duck Fat, Rendered, 4 oz celery diced, 4 oz carrots , 7 ounce onion , 1 Leek
  • Stir in the garlic, oregano, and cook for 2 minutes.
    1 garlic clove, 1 tsp oregano
  • Add yellow split peas, bay leaf, pepper flakes, ginger, and chicken stock, increase heat to high, and bring to a quick boil.
    4 bay leaf, 1/4 tsp red pepper flakes, 1 tsp ginger, ground, 1 lb Split Peas Yellow, 38 ounce chicken stock
  • Reduce heat to low-medium, cover with a lid, and simmer for 25 minutes or until the peas reach your desired level of softness.
  • Taste and season with salt and pepper as desired.
