- 6.5 ounce heavy whipping cream
- 6.5 ounce whole milk
- 2 ounce egg yolks from around 3 large eggs
- 2.5 ounce sugar granulated
- 7.5 ounce dark chocolate 72%
Instructions
Whisk Egg Yolks and Sugar,
- In a separate medium bowl, put the egg yolks and half of the sugar, and whisk together until light.2 ounce egg yolks, 2.5 ounce sugar
Bring Cream and Milk to a boil
- Combine cream, milk, and the remaining sugar in a saucepot. When the cream and milk reach a boil, pour the hot liquid over the egg yolk mix. Do this a little bit at a time while mixing, so that you do not cook the eggs.6.5 ounce heavy whipping cream, 6.5 ounce whole milk
- Return the mixture to the saucepan, and heat, stirring constantly so the eggs don’t scorch on the bottom. Heat the mixture to around 82-84°C or 180°F) until it thickens, and remove from the heat.
Blend to a super-smooth emulsion
- Strain and immediately pour over the chopped chocolate, leave for 2 minutes, then stir until the chocolate is fully melted. Use an immersion blender to form a super-smooth emulsion. Do not incorporate a lot of air, as you do not want bubbles on the top of the Crémeux.7.5 ounce dark chocolate 72%
- Once you’ve completely combined all ingredients and you’ve scraped the bowl well, put it into your desired vessel. Cover the Crémeux with plastic wrap, making sure the plastic wrap is touching the whole surface. This is to prevent skin from forming on top. Refrigerate for at least 8 hours.

This is the best temperature to thicken the egg yolks without scrambling them. Storage: Chocolate Crémeux can be kept in the refrigerator for 3-5 days.
You can freeze Crémeux if you need to keep it longer or for things like cake inserts. It's best to let the Crémeux set completely in the refrigerator before freezing. This makes it smoother and helps prevent cracks.
