Make the Chocolate Cremoux

  • I make my Chocolate Cremoux the day before, and place it in the refrigerator for the next day's use.
    10 oz Chocolate Crémeux

Roast the Bananas - Preheat the oven to 350°F.

  • Place the overripe bananas (with skin) on a parchment-lined 1/2 sheet pan in the oven, and roast for 40 minutes. 
    The bananas should blacken and be very soft to the touch. Remove from oven, cool for 10 minutes, peel and mash. Set aside.

Rinse the Canned Beans

  • Open the canned beans, place them in a colander, and rinse under cold running water for about 2-3 minutes. This will help remove some of the sodium that is on the surface of the beans.
    1 1/4 lb black beans

Cream Butter and Sugar

  • In a mixing bowl, cream together room temperature butter and sugar until light and fluffy. Add baking soda, baking powder, and cocoa powder, blend, then set aside.
    1 tbsp vanilla extract pure, 4 oz Butter, salted, 1/2 cup sugar, 1 tsp baking powder, 1 tsp baking soda, 2 oz cocoa powder

Blend the Black Beans

  • Using a Vitamix blender, blend black beans, roasted bananas, eggs, and vanilla until completely liquefied.
    Add the creamed butter, sugar, and cocoa mixture and blend until smooth with no lumps.
    5 egg, 2 bananas

Scoop and Bake

  • Spray tins with non-stick spray. Scoop batter into prepared tins.
    To bake your cakes, place them on a sheet pan. You want to cover them with parchment paper and even another sheet pan on top.
    This little trick helps keep the tops from browning too fast and encourages a flatter, more even rise by trapping some heat and steam.
    Bake for about 20 minutes or until an inserted toothpick comes out clean.
    Remove the pound cakes from the oven and cool in the pan for 10 minutes.

Garnish the Cakes

  • Garnish cakes with Chocolate Crémeux and seasonal fresh fruit and fresh mint
  • It's best to serve the chocolate black bean cakes immediately after frosting.
