For me, born and raised in Germany, potatoes are a traditional food in my family and cultural background.  Potatoes are deeply ingrained in German culture and are often associated with comfort food and home-cooked meals. It is hard to imagine German cuisine without them!

Ingredients
 

For the Potatoes:

  • 16 ounce small potatoes A mix of colorful potatoes, red, yellow, purple.
  • 2 tbsp extra virgin olive oil
  • 1 pinch sea salt to taste
  • 1 sprig rosemary, fresh  

For the Roasted Vegetables:

For the Dressing

  • 2 tsp Dijon mustard
  • 1 tbsp water
  • 2 tsp extra virgin olive oil
  • 8 ounce yogurt 
  • ½ bunch flat-leaf parsley chopped
  • ½ bunch chives sliced

Instructions
 

Preheat Oven and Prepare Potatoes:

  • Set your oven to 400 °F using the top and bottom heat settings.
  • Wash the potatoes thoroughly. Cut them in half, depending on their size. Place the potato halves in a bowl and toss with olive oil and sea salt. Spread the potatoes on a baking sheet lined with parchment paper. Add a rosemary sprig to the potatoes. Place the baking sheet in the oven and roast the potatoes for 20-30 minutes
    16 ounce small potatoes, 2 tbsp extra virgin olive oil, 1 pinch sea salt, 1 sprig rosemary, fresh  

Prepare and roast the Vegetables:

  • Wash and clean your vegetables. Cut them into cubes and place them in a bowl. Add the minced garlic and the olive oil to the vegetables and mix well. Roast the vegetables in the preheated oven for 12 to 15 minutes, remove from the oven and cool. Alternatively, you can grill the vegetables over indirect heat for 10 minutes.
    1 eggplant, 1 zucchini, 1 red bell pepper, 1 yellow bell pepper, 1 garlic clove, 1 tbsp extra virgin olive oil

Make the Dressing and Serve:

  • In a bowl, whisk together mustard, water, olive oil, and yogurt. Wash, and dry, parsley, and chives. Finley chop and add to the dressing and mix well.
    2 tsp Dijon mustard, 1 tbsp water, 8 ounce yogurt , ½ bunch flat-leaf parsley, ½ bunch chives, 2 tsp extra virgin olive oil
  • Combine the roasted potatoes, vegetables, and dressing in a bowl and toss to coat.
