Fried Caper Remoulade

Caper Remoulade
- 3 medium eggs
- 1/2 tsp extra virgin olive oil
- 1 cup Mayonaise
- 1/2 cup greek yogurt
- 1/3 cup capers drained
- 1 cup gherkins chopped
- zest from one orange
- zest from two lemons
Spice Blend
- 1/2 tbsp coriander seeds
- 1/2 tbsp peppercorn black
- 1/2 tbsp allspice berries
- 1 tbsp onion powder
- 1 tbsp Celery Seed
- 1/2 tsp cayenne pepper
- 1 tbsp Italian parsley chopped
Instructions
Hard boil the Eggs.
- Place your eggs in a single layer on the bottom of your pot and cover with cold water. The water should be about an inch or so higher than the eggs. Cover the pot with a lid.3 medium eggs
- Over high heat, bring your eggs to a rolling boil. Remove from heat and let stand in water for 10 minutes. Reduce the time slightly for smaller eggs, and increase the standing time for extra-large eggs.
- Drain water and immediately run ice cold water over the eggs until cooled. Rapid cooling helps prevent a green ring from forming around the yolks.

- Roast the coriander seeds, black peppercorn, and allspice berries in a dry pan until fragrant. - In a saucepan heat the olive oil, add the capers, and fry until crisp, Use a slotted spoon and move the fried capers to a paper towel to drain the oil.1/2 tsp extra virgin olive oil, 1/3 cup capers

- Chop the eggs and add them to a mixing bowl. Add the mayonnaise, yogurt, fried capers, gherkins, chopped parsley, lemon and orange zest, and 1 tbsp of your spice blend1 cup Mayonaise, 1/2 cup greek yogurt, 1 cup gherkins chopped, zest from one orange, zest from two lemons
